Support different encodings

Description

ISO-8859-1 support would be very welcome, because UTF-8 is still just too problematic for some non-English languages with channel names in ISO-8859-1 etc.

Colloquy already supports multiple encodings.

You can find them in: Settings.app -> Colloquy -> Advanced Interface. Under the section titled "Default Encodings"
