can we have an option so that we can disable these notices? for some reason i keep getting these although everything looks good.

If "everything looks fine" then that means that you should set the encoding to Western (ISO Latin 1) — which is the fallback when Colloquy can tell that the sent encoding isn't the one actually selected, which is why you happen to be seeing the right result.

thanks for your reply. i get incompatible encoding errors when i use both UTF-8 and Western Latin I. do you know what I can do to disable these alerts?

you're probably confused by colloquy's ability to set both a connection encoding and a per-room encoding. what you need to change is the per-room encoding in the toolbar. join us in irc://irc.freenode.net/#colloquy for further questions
